History of the domain :
At the beginning of the 20th century, the estate consisted of a dozen hectares owned by the farming family Jausset. With Seraphin's wedding Sabon and Marie Jausset le name SABON appeared in 1902, and eventually created the Clos Mont Olivet brand in 1932. He sells his wine to wine merchants, but soon decides to start bottling it himself. They were a huge success in France and England in 1950. Seraphim's three sons Sabon Joseph, Roger and Noel worked together for several years before the estate was divided into three. Joseph, the eldest daughter, took over the reins of the estate, while her brother, Roger Sabon, and Noel created Chantes Cigales. It was Joseph's turn to have three sons: Jean-Claude, Pierre and Bernard joined forces and contributed to the estate's prosperity. Then Pierre will then take on the task of managing the winery. He will be assisted by his brothers, and will aim to produce wine as good as his brothers'. ancestors. For three decades, his mission was to bring out the very best in the estate's wines. Following an accident in 2002, he handed over the keys to the estate to his nephew Thierry. Thierry, Céline and David had been in the business since 1998. Châteauneuf du Pape red :
The grapes come from several lieux-dits which are : MontalivetLa Crau, Les BlachièresCoste Froide, Wood Seneseau, PalestorBois Dauphin, Pied de Baud, Les BousquetsLes ParransLes Marines. Most of them are expanding to the north and east of thename. The soils are composed of quartzite colluvium, marine clays, sands, very coarse molasse and rolled pebbles. The bunches are harvested by hand, with highly selective sorting to ensure that the best berries are picked. Press juice and free-run juice are aged separately. Maceration lasts 35 days, with fermentation in exclusively concrete vats. Ageing is carried out at 70 % in foudre, 20 % in concrete vats and 10 % in old barrels. The blend is composed of 75 % Grenache Noir, 10 % Syrah, 9 % Mourvèdre and 6 % of other grape varieties ( Cinsault, Counoise, Vaccarèse, Terret Picpoul noir, Muscardin). This decadently mature cuvée combines notes of garrigue, raspberry, black cherry and dark chocolate on the nose. The palate is full-bodied and creamy without being heavy, with a supple, long finish. It maintains a sense of balance in the tension between the sensation of ripeness and its delicate herbaceous nuances. It can be enjoyed over the next 6 to 8 years.

Châteauneuf du Pape white :
The blend is composed of 40 % Clairette, 30 % Roussanne, 14 % Bourboulenc10 % Grenache Blanc, 2 % Clairette rose, 2 % Picardan, 1 % Picpoul and 1 % Grenache Gris. Fermentation and ageing take place in 85 % stainless steel tanks, 11 % barrels and 4 % multi-wine barrels. The winemaking process is carried out without destemmingand the grapes are harvested in the early morning. They are pressed and the selected juices spend a night in static settling. The nose is marked by scents of crushed stone, peppery spices and honeyed pineapple. This is a broad, generous example of the appellation's white wines. This cuvée is full-bodied and almost creamy in texture, with notes of underripe peach, ripe pear and lime on the mouth-coating finish.

Châteauneuf du Pape Cuvée du Papet :
The blend is composed of 75 % Grenache, 15 % Mourvèdre and 10 % Syrah. It can be enjoyed from 5 years in the cellar, and can be kept for 15 years or more in the best vintages. Scents of sun-warmed stone, asphalt and black olives emerge on the nose of this cuvée. Full-bodied, savory and complex, with dark fruit and prune flavors, notes of roasted meat and dried spices, a supple feel and a long finish.
